A cup of Chai is magical...I don’t know if you have ever visited India, but if you have, you will undoubtedly recall the many Chai tea stalls throughout. These stalls are notoriously run by Wallahs (he or she who brews the tea) who are both protective and secretive of their prized recipes. And in my experience, Kamal and his Walia Tea Stall were no exception.
When I first laid eyes on Kamal and his stall, both appeared quite ordinary; but there was nothing ordinary about Kamal or his Chai. Kamal’s stall was old and rickety, and stood proudly open for business near the sacred Golden Temple. Despite the state of his stall or his long hours of work, Kamal joyfully brewed an exceptional cup of chai for his patrons. Carefully blending a unique mixture of spices that he grinds himself, he handed me a cup. Once I tasted this special tea, I knew I had to find out more about this man’s story and his delicious blend of Chai. Swooned by the flavours in the cup I held, I excitedly asked Kamal what ingredients were hidden in his masala. His response? 28 years of experience. It was clear he wasn’t going to divulge the secrets of his craft so easily. I made frequent visits to Kamal’s stall in the following week and brought both friends and family along. After these visits to Kamal’s stall, me drinking his Chai, and he enduring my pleas to share his recipe, I was able to convince him to sell me his masala and share it outside of India. Through these visits to the Walia Tea Stall, I came to know more of Kamal’s life story. He had been making and selling Chai on the streets of Amritsar, Punjab since he was a boy. Now a father of two, and a level two Reiki master to boot, Kamal continues to work long, dedicated hours totalling about 18 hours per day. When I arrived back in Vancouver from my journey in India, I was eager to sell Kamal’s blend, and The Chai Guy was born. I am happy to report that I put the profits of the first batch of Chai into a fund to improve Kamal’s situation. This money allowed him to buy a new stall with a roof, a true blessing, as now Kamal is able to continue his tea sales through monsoon season. Back in Vancouver, I am excited to share The Chai Guy’s special blend with you. I know the recipes honed by this remarkable Wallah will satisfy any lover of authentic indian tea and spice. |
